Hey there! I hope your weekend is going great! It was 68 degrees yesterday in my neck of the woods, so you can betcha I was outdoors for a run! I ended up doing 5 miles, and can you believe I was wearing a tank top and shorts? In February? Love it!
After all of my Saturday chores were done and I finished my run, I spent some time outside enjoying a book and some coffee.
I’m really enjoying this book so far. I’m only about 100 pages in and have found myself laughing out loud at some parts, crying at other moments.
Another thing I did yesterday was start out the day with a healthy breakfast. Most days, I’ll have a smoothie made with greens and various fruits, or I’ll have oatmeal that’s either warm or soaked overnight. Yesterday I made oatmeal:
For this oatmeal, I took about 1/2 cup oats, 1 Tbsp of ground flaxseed, 1/2 Tbsp of chia seeds and covered it with water and microwaved for 2 minutes. I then added a Tbsp of peanut butter and then topped with fresh blueberries and banana.
This is a very hearty breakfast that will keep you full throughout the morning.
The great thing about oatmeal is that you can use various nut butters and fruit for toppings. You can spice it up with cinnamon. You can add a splash of non-dairy milk. It’s quick, easy, healthy and filling.

Overnight oats — long run sunday. It was a whopping 50 here yesterday. Actually, about 60 where I was — cleaning out my parents’ home — so either in my car or cooped up all friggin’ day so I couldn’t even enjoy it.
No shorts for me. 😦

Yay for an outdoor run and oatmeal! My breakfast will either be a smoothie, oatmeal or English muffin & nut butter. I haven’t decided yet.

Oh my goodness, we are so much alike. That could have been my bowl of oatmeal and I loved that book. Have you read A Man Called Ove by the same author? I loved both of his books so much. It has been beautiful in my neck of the woods too. I ran the Oak Island marathon on Saturday in a singlet and running skirt.

Breakfast was avocado toast. I just mash up 1/2 an avacado & put on whole grain toast. Many mornings it is simply overnight oats.
